Ride quality wasn't something we had an issue with on the 22", so I guess when I say I didn't notice a difference it means moreso that we didn't notice any degredation in quality.

If you're coming from stock 20" tires then I believe your speedo and camera calibration may be off by a bit. From 21" or 22" I think the difference from the 20" 275/60R20 was calculated to be ~3%? I don't have the numbers off the top of my head but there are a few threads in this subforums...
I was able to buy a set from the Rivian Service Center for ~$300 along with rims + caps.

Yeah, they provide a roll of adhesive-backed loop and pre-cut hook strips. You have to cut and install the loop strips yourself, and put the hook pieces on the back of the mats yourself (one of my mats had hooks preinstalled, but i removed reinstalled them to change locations).

They recommend leaving it down for 48hrs to let the adhesive set, but I'll see about getting some photos of seats up this weekend after it has sat a bit.
I got a set of 10 hook strips and a long pile of the loop side that I had to cut to size. The loop side was slightly longer than all the strips combined, but not much slack.

Wheels only, or +TPMS and caps? Bellevue SC quoted me $2600 for AT Brights wheels only, $323 for TPMS, and $140 for caps. Came out to ~$3400 after tax.
Try talking to the service folks, they quoted me ~3k pre-tax for the plain 20" wheels + TPMS + center cap. I had read about others getting quoted closer to 2.2-2.5k before, but maybe that was without the other bits. Haven't picked up yet as I just tacked it on to an existing service appointment...
