I'll assume that's a no then? Old Nissan I had had this type of bed extender but when the tailgate was closed you couldn't steal it. I was hoping yours was the same way.
I have to think about that - antitheft isn't built-in, but you could simply add a bike chain lock between the extender and the truck bed tie down ring. My opinion is this is low risk for theft in general.

Why the longer bolts? What's the reason for offering it as an option? If I want to us the short ones does it require me to flex the natural shape of the bed extender to fit the mounts making it where I would have to lock in one side then go pull the other side in to lock it?

I just installed mine and I have to say I'm constantly in awe of the work that @EV Sportline does. From seamless designs to quality workmanship and ease of installation it's really top quality stuff.

One of my biggest concerns coming from a Jeep with a huge aftermarket selection to Rivian was the lack of accessories but the team there has done an incredible job of building useful bespoke accessories.

You could try this mod from @djrockadoo with the rough country version. It allows you to access the spare tire well (which i think you are referring to by trunk?) with the extender attached (but you can not flip it with this mod). I did it this way and it seems almost OEM the way it fits.

I had a 98 XJ that I drove on and off and wrenched on for about 20 years. 2 kids and the Rivian made me realize it didn't make sense to keep it, but I had done a lot of modification to it and loved the after market options.

In terms of "aerodynamics," yeah it was basically like trying to drive a barn down the highway.

Nice…but what if you have accessory’s mounted to your cross bars?? Do you have to remove them every time to flip out the bed extender? Why don’t they make a bed extender that is on a sliding/locking system that way you don’t have to remove your cross bars every time?

I don't have the cross bars on very often. But yes you'd have to remove them to rotate it. Otherwise you could just disassemble the parts that rotate and just pull it straight out and reassemble in the orientation you need, which would be pretty easy.
