There are a bunch of options in 255/50R21. They are slightly smaller than the stock size but offer some choice, including summer only tires.
If you’re willing to accept your Speedo reading about 2% faster, odometer logging slightly higher, losing about an inch of ground clearance, a potentially harsher ride, greater chance of curb rash, possible TPMS and calibration issues and maybe interfering with ADAS, sure.
Not trying to overstate the potential problems, but they are real.

I guess if you lives in the middle of nowhere, you weren’t getting in our two anytime soon because Ruben is prioritized people living near service centers. Secondly, if you do live in the middle of nowhere, you probably don’t have the best roads, therefore you would choose the 20” wheels in the first place for the all-terrain tires. Lastly, does Tire Rack not ship to the middle of nowhere?
One would hope someone able to purchase such a vehicle would figure out the plusses and minuses of buying the right tire for them. But it's good to mention it for sure so people don't go off half-cocked thinking there isn't some risk if you buy 21 inch tires. I'm still considering going with the 20s, but that extra thousand would cover two-thirds of Forest Green for me. I can afford either way, but if I'm confident enough that it's going to sell to buy this car, I'm pretty confident there will be choices for me when tire change time arrives. Hankook seems to be on top of R1 tires, no?

It's only 0.5" ground clearance. I don't think the 2% error is a big deal, since most speedos already read a bit high anyway. If all tires are matched, I don't see a reason for a TPMS error. As far as some of the other things you mentioned, I'm not sure.

I think it’s actually .8” but that’s not a big difference. Bottom line is, several folks have thrown out the smaller size as if it’s an exact replacement and it’s not. All of the possible issues might manifest, some for sure will.

The ride height difference should be just the difference in the height of the sidewall, right? If it's a 255/55-21 vs a 255/50-21, the difference in the sidewall height is 0.05*255/25.4, which is 0.502".
But I hear you, one must always be aware of the unintended consequences/risks. The more our vehicles become SDV, the riskier things get when we mess with them.

One would hope someone able to purchase such a vehicle would figure out the plusses and minuses of buying the right tire for them. For me it boils down to not accepting to ride on crappy AT tires on asphalt for the first 30K miles of this great car …. The AS Scorpion gives more precise steering and smoother ride with less noise. Also, the 255/55 gives a good size sidewall for the tire. And that $1K saving would pay 2/3 of the price of the next 30K AS tire …….
I would prefer if Rivian gives the option for a 20” AS wheel/tire for Launch Edition; maybe a smaller size of the present 21”.

Explain that to the guy in the middle of nowhere that needs a replacement tire and can’t get it…it’s nice to have a size with options if/when you need it…
This is a problem on lots of cars with uncommon tire sizes, including low profile, or RFTs. Not a new issue.

For me it boils down to not accepting to ride on crappy AT tires on asphalt for the first 30K miles of this great car …. The AS Scorpion gives more precise steering and smoother ride with less noise. Also, the 255/55 gives a good size sidewall for the tire. And that $1K saving would pay 2/3 of the price of the next 30K AS tire …….

The more I think about it, I'm not planning any hard-core off-roading. Some, but in conditions that the all-season tires will be fine. So, I'm going with range.

Why? How many buyers are thinking ahead to tire replacement when they first purchase their vehicle? Sucks for the consumer, but really very little impact on Rivian.
Proprietary tire sizes will affect Rivian's reputation with mainstream buyers. Mass-market consumers don't view this as a quirk—they view it as a predatory trap to bleed them on maintenance. When early adopters start posting $1,500 tire bills or getting stranded for weeks because local shops don't stock a single-source size, that viral negativity will scare off thousands of potential switchers. If basic maintenance feels like a logistical nightmare, the R2 will fail to win over everyday family

I would prefer if Rivian gives the option for a 20” AS wheel/tire for Launch Edition; maybe a smaller size of the present 21”.
I asked Rivian Assistant about this possibility and got this answer:

"If you’re hoping to get the 20” all-season setup on your Performance Launch Edition, I’d recommend keeping an eye on the R2 configurator as your order window approaches. Sometimes wheel and tire options expand as production ramps up, but as of now, the Performance Launch Edition doesn’t list the 20” all-season as an available option."​

And when I pointed out to the robot that there was much discussion online, and tried to press the question a different way:

"You’re definitely not alone—there’s been a lot of conversation about the limited wheel and tire choices for the R2 Performance Launch Edition. Right now, the Performance Launch Edition comes standard with 21” Liquid Tungsten All-Season wheels, and you can opt for 20” Black Sand All-Terrain wheels. The 20” Bicolor Carbon All-Season wheels are only available on the Premium and Standard trims, not the Performance Launch Edition.​
"Rivian sometimes expands options as production ramps up, but as of today, those are the only choices for the Launch Edition. If you’re hoping for more flexibility, it’s worth keeping an eye on the R2 configurator as your order window approaches in September or October—any updates or new options will show up there first."​

Sounds generic to me - a gentle way to say nope…. But maybe someone somewhere is taking note.
