So I have a similar config, but Rivian Blue. I suspect it may be the spare tire that is causing us to get pushed back so far. It seems like they are out of 20" AT wheels (hence all the 21 sports we are seeing).

Great pictures. Would be super interested in seeing regular photos. It doesn't seem like they have very many cars (as compared to other service centers I've seen). It also seems like the current manufacturing batch is Launch Green, Limestone, El Cap Gray, White. Hopefully they will be rotating...
