I have a December 2022 build R1T so I think it's probably exactly the same. Be aware there are some elastic loops holding it on as well. You don't need to take those off, just remove the trim enough to get the wire through the gap above the airbag.

No worries! Those are headrests for the kids. They're pretty cool, they flip up out of the way when not in use. My wife wishes there was a way to attach one to the front passenger seat!

Yes, I have it installed and it is working great! I don't think it will be merged into the main branch of Sunnypilot any time soon, but that's really up to the folks in charge of Sunnypilot. Even the tesla-mads branch hasn't been merged into main SP yet.
It looks probable, but that'd be another long cable to route from the mirror harness all the way down to the passenger footwell. Lukas is working on a power adapter that would tap into the passenger footwell fusebox so there's no need to route any long cables.
You can only run one at a time. When you run the install for the first time it will ask you to either install "Openpilot" or "Custom Software". Choose Openpilot if you want to run the official version of Openpilot, or choose "Custom Software" if you want to install anything else (like Sunnypilot).
