I would highly recommend you contact Rivian, explain the situation, and see if you can arrange for a test drive.
I would recommend this. Also, @BHWhite - have you considered hand control modifications to your vehicles? I wonder if Rivian has set up their vehicles to make such mods easy. I know Teslas can be adapted just fine at this point.

Nope. Can activate between 20 and 85. Stays active all the way to 0. I use it every single day.
Really? Maybe I Misunderstood what my guide said about ACC and the little icon that shows up at 60mph. I'll have to give it a try.

Really? Maybe I Misunderstood what my guide said about ACC and the little icon that shows up at 60mph. I'll have to give it a try.
One click down is ACC and has no icon, two is Highway Assist and shows the icon but doesn't need a specific speed just specific locations.

Haven't driven the Rivian, so not sure how useful this is to you. I have a Tesla Model S and Chevy Bolt. In high regen on both vehicles, you definitely have to keep your foot on the accelerator and ease off as you slow. The Tesla requires a slight brake to fully stop and once stopped has a hold feature and you don't need to keep your foot on either petal. The Chevy will fully stop but you need to keep your foot on the brake on inclines. The Chevy has a setting to turn regen off and it drives like a regular car. To be honest I have never tried the Tesla in the lower regen setting. My guess is that if the Rivian doesn't work for you, one of the other EVs will have a mode that does.
