I had delivery window of June - July 2023 for a while now. A few days ago, I got access to the R1 shop out of nowhere. So, I started to take a look but found nothing I liked. Then today I no longer had access to the R1 Shop and my delivery window was changed "Processing Estimate". So now that it was processing, I have decided to remove the underbody shielding option. I don't think I will be doing that much off road to really use it. 30 minutes later, I got an email asking to review my order and it was time to confirm my configuration and it told me the name of my guide. So, all I need to get my order to move is to remove the underbody shielding?

When you lose access to the shop, it usually means a vehicle was matched to your preorder. If that happened when you had the underbody shield selected, most likely that the vehicle they're trying to match to you also has it. Probably best to talk to your Guide and see what the timeline is

Anecdotal evidence, but a guy who works in my building who preordered his R1S 3 months AFTER I preordered mine, changed his build and was given immediate access to a Guide and the Shop in March (3 months BEFORE mine!) where he grabbed a *nearly* identical build to mine EXCEPT that it had 22" dark wheels instead of my 20" AT dark wheels and NO underbody shield like my build. We BOTH live in the same SC area. My latest delivery window was actually July-August where as his was July-Sept. I FINALLY got access to the Shop (no Guide) last week of May and monitored it HOURLY; about a week later I spotted the SAME *nearly* identical build w/ 22" dark wheels and NO underbody shield which I immediately grabbed and took delivery 2 weeks later. When I finally got a Guide and asked about the situation they said actually the 20" AT black wheels and underbody shield was actually the more popular build, so yeah, I suspect the underbody shield more than the 20" AT black wheels may have been my hold up.

Would be nice if Rivian was more transparent about these things because I DEFINITELY would have changed my build earlier if the underbody shield was the hold up and I don't buy the excuse that them notifying pre-buyers of high demand options blocking deliveries would cause more problems.
