I'm guessing the bars are flexing and the wind is catching the camera.

Yeah the wind is catching the camera and also turns are causing the causing selfie stick to sway a bit. That being said, i also was lazy and just key framed one orientation from the camera. Since it's a 360 camera you can technically have it track an object in scene instead which would then make it rock solid and compensate for any movement.
