When the app start up, it queries the vehicle to get the current state information such as battery%, cabin temperature, lock status, etc. One other piece of information it gets from the vehicle is the color.
The color is displayed in the app as a overlay on the white vehicle outline. Think of it like a PPF wrap. But if the app doesn't get the color information from the vehicle, then all you will see is the white vehicle. I don't know if you've noticed, but sometimes when the app starts up from scratch, e.g. after you reboot your phone, the app might show the vehicle as white for a fraction of a second. That's normal. I think the app caches the data it receives from the vehicle so that if the vehicle is in a deep sleep the app still has data to display immediately - the app then updates the data when the vehicle wakes up.
So I can totally see that perhaps when you rebooted your phone or installed the new app version, if the vehicle happened to be asleep at the time, the app didn't know what color to use and defaulted to the stock white. Then cached that result. That's just one way this could have gone wrong.
Regardless, the solution is the same. First reboot your vehicle (hard reset) to make sure all the configuration values like vehicle color are initialized correctly inside your vehicle. Then, while your vehicle is still awake (maybe stay sitting inside so it doesn't shut off), kill your app (make sure it's not still running in the background - the easiest way to do this is to reboot your phone). Then launch the app again, which should now be able to get the correct color from the vehicle while it is awake. If that doesn't work, you could take the additional step of deleting the app then re-installing it.
And if those steps don't solve the problem, contact customer support.

If this is a common theme and it turns out that this is a problem with all LG builds, I guess it's also possible that there's a software mistake in the update - because there is no such color as LG in Gen 2, I suppose some of the code that is shared between Gen 1 and Gen 2 got changed to remove LG, leaving the default as white.
Regardless, it won't get fixed unless someone contacts customer service and reports this, and it always helps to rule out possible problems on your end first before contacting customer service.

Same thing happened to me today. I have LG R1T and first noticed it in my app. I opened my wife’s app and saw it change from Launch Green to White.

It's been buggy with my El Cap color, too. Sometimes it will briefly display white, then switch to gray

I've seen many white R1Ts in my app over the years, my LG always eventually comes back...usually after a second or two.
