as anyone found a product to apply the the ash trim to give it some depth and protection without changing the color dramatically

Could I use an oil, Teak or something? My dash wood is looking like it is cracking up or drying up...
You could, but it will definitely change the color/ sheen.
You could also try Guardsman furniture polish/ cleaner, though if you're cracking, you might be too late. As always, test on an inconspicuous place(rear door?) first to see how it looks.

You shouldn't need to do anything. Keep in mind that any treatment that stains/discolors or damages the trim will not be replaceable under warranty.

Consider that it is intended to look more like weathered driftwood or barn wood than your typical sealed/polished wood finish.

Also keep in mind it's likely just a thin veneer wrapped around a plastic backing. It's not a solid hunk of machined wood that will absorb a lot of finish. I've seen people doing similar on the wood trim in Model 3s (also a thin veneer), and it never looks great.

Mine looks very similar, my cell takes HEIC format pix's and in very large size, like 8 MB and such. I will try to get a good light on the dash and do a pix, then try to load that pix file here.... but basically a dry looking open grain wood, not like my Acura or Porsche woods. Since I keep it in a garage year round, and not in open parking except at the store, I will not fear failure.

Ash is a very open grain wood.
I'm guessing it a water-based finish on there because it looks like the open grain was raised and not sanded back down. It's extremely rough, which ain't great for dust/ lint collection.

I buffed mine with Rubio monocoat when I first got it. It’s a catalyzed wax. The only reason I did it is because some of the wood was so rough it was quite unpleasant to touch so I lightly sanded with 220 and then added Rubio.
