It's because it's a bit difficult to half tap to cancel. Full tap in the opposite direction just activates the turn signal that way.
It's also possible that the signal is canceling on its own and your timing is such that you are now activating in the opposite direction.

Sure, it's more secure, but not substantially so and only against specific attacks. The predominant threat is these two security measures work to counteract is replay attacks against which they are equally effective.
That's the number one reason I won't turn it on and have advocated to Rivian to enable PIN to drive. Nearly the same benefits from a security aspect, but none of the infrastructure tie in requirements.
