The build time difference is easily explained with the fact that there are less steps to build R2 over R1. The very simple fact that body on frame requires more steps than an unitized body where there is no mating between the frame and the body.

Comparisons aside, I find that Rivian software is not what it should be. There are too many little inconsistencies. They'll fix somethings and new issues pop up.
