I would say the plain and simple answer is that there are no/few 22" AT tire options, add to that the fact that you need/want an EV specific tire and then the options are even less...I'd say the only way 22s might make sense for anything more than occasional dirt/gravel is if you can fit a 35"...
In my case the speedo was already off by 2 mph (20" OEM), once I put 33" tires on from 34" OEM tires the speedo was off by 3 mph. On shorter trips the odometer is off by 2.97%, longer trips seem like they are correct - not sure why/how that works...going to drive 80 miles today so will have...
Congrats to the Teams for bringing a great option to the Rivian...what's more, this EV optimized tire is half the price of the competition...truly impressive work!
Prob. just means the 116H load/speed rating, not too many tires carry that combo...could also be a myriad of other tweaks for the heavy load/torque:

My guessometer measures 30 inches...from top of rear seat
Alternately - If R2 is 15" shorter (-15), but doesn't have third row (+33), net change is +18" (R1S cargo length is ~15" from top of 3rd row seat back)
Maybe 33" from top of rear seats and ~40" from bottom????

22" sidewall is slightly over 5", while the 20" sidewall is 7" (275/65R20).
Reality is that we are already working with an extremely skewed setup for offroading (ideally the 20" rims would use a 40" tire - which obviously can't work). Ideal is 50 sidewall/50 rim. [1:1] 20" is ~40/60 [2:3]...
Then it all comes down to replacement options, are you comfortable with a limited amount of 22” options? Most say the 22s are not as good on bumps/roadfeel…I don’t have any experience with that.
All things being equal, I would get the cheapest option then add a set for ability to have...
If you are even remotely considering any off road use then it’s an easy call for the 20” AT…
You could always get an aftermarket set but then you have to deal with having Rivian change the geometry/settings…something that is not as simple as it should be…
I think it’s a numbers game, 21” tires cost double 20” options (maybe triple in some cases). If you bought 21” set for $400, went thru 2 sets of tires (40k or so), looking at $4k total. This means you are better off buying Atomic Wheels for $2.5k then getting a high MPK tire like...
