Looking for actual experience: Snow vs Off-Road vs Sand Modes

So I had to cross about 8" of wet mushy snow interspersed with glare ice this morning to get to some hay. I used snow mode, which worked fine, but it was uneven (pasture) terrain and also soft mushy snow which might or might not have unfrozen ground underneath.

I would have used off-road, thinking of putting my old ice pickup into 4wd, but then got to thinking and I suspect that's designed mostly for dry terrain, like utah/colorado when it hasn't rained and there's no gumbo.

I then thought about sand, which I've never driven on much but seems kinda like mushy snow, but the warning says something like only use in sand, so I left that alone also.

Any advice on which to use when, particularly regards wet mushy snow, gumbo after a 3-season storm, and snow on gumbo? I must have searched wrong because my search for "off-road mode snow mode" turned up nothing useful.

I used snow mode in similar conditions to haul a Toyota Tundra out of a deep ditch. I couldn't get enough traction to budge the really stuck vehicle while in standard drive, but immediately yanked that sucker out as soon as i put it in snow mode.

I use snow mode down on the Mexico border driving on muddy clay roads. Only thing that will keep my truck in the center of the road
