I say you got very unlucky.R1s was made 6/24, I took delivery 09/25.
The gen 2 R1S started being delivered in June 2024 - the month your vehicle was made. There were significant changes between the generations - in terms of vehicle architecture, design and process changes throughout.
Whenever new product/significant updated is released, early builds are made in the steep part of the learning curve. This always affects quality and amount of rework. While the gen 2 vehicles are much better than gen 1 in terms of overall quality and usability now, it does not surprise me that early builds with issues.
Since it sounds like Rivian is addressing all of your issues, I don't think there is anything you can do other than live with it or at your discretion to get rid of the vehicle if you so chose.
Perhaps keep talking with Rivian is the path forward. I know you mentioned that they have gone silent since you refuse to sign the liability release but I would keep at it if you are willing.
Meanwhile just drive the vehicle and you'll probably have more good days than bad.
