Roadtripping With an Extra Set of Wheels?

I definitely get the concerns surrounding damaging one of the 21" tires and then being stuck waiting for a replacement. If I was to hypothetically off-road with the 21"s somewhere like Bundy Hill Off Road or Holly Oaks ORV Park, would I likely be missing out on a lot/significantly risking getting stuck?
I took my R1S with 22" sport OEM tires to Holly Oaks ORV Park about a month ago and didn't even air down properly but was able to doing a surprising amount of stuff. However, I did carry a full-size spare and 4 recovery boards just in case, which does take up enough space that I couldn't recommend it unless you lived close by. I took a trip down to Florida with my full-size spare, but I did not sleep in the vehicle and I am similarly trying to think of a way to make this work. My only guesses are still to remove the 2nd row like some have done and store the spare there, or get the hitch set up for the spare to go on the back of the vehicle. I haven't seen any popular options for mounting the tire to the roof, but I think that would also be an option, though it will certainly impact range efficiency some.

I think it would be most wise to only do offroading with a full-size spare regardless of the wheel/tire. 5 wheels/tires of any kind beat 4 of your best 20" All-terrains if we are talking about the chance of getting stuck for a full day.
