I've made multiple trips from PA to Stowe, VT, I can give you a few tips for 2/3 of your trip, these are all pre-adapter so CCS-only, I think you'll have great success with an adapter on this trip.
Many times my first recommended northbound stop was Newburgh, NY. Originally there was only an Electrify America here at a Walmart and it was very busy, I had to wait multiple times. Sometime this year Rivian opened a RAN here though, so this should be an excellent stop for you. It's a *little bit* off the interstate but not too bad.
There's a good/easy/fast stop at a Target in Latham, NY near the Albany airport.
One note if you get steered towards a charging station at a Bank of America in Kingston NY. The charging worked fine but there was nothing nearby in the way of amenities. I was really ready for a restroom and I think I walked like 3 blocks to find one?
Be wary of the rest areas along the NY Thruway - the CCS charging at these locations seemed slow IIRC, but I don't think I've ever actually stopped.
There's an Electrify America in Pompton Lakes NJ (this has been a recommended stop on my return trip a few times), it's been unreliable for me (busy, broken equipment) but there's a bank of Tesla chargers here that were frequently available if they are adapter-friendly. There's a Starbucks here and nice little shop across the street that has tasty fancy hot dogs.

John & Dave: Thanks to both of you for the feedback. Returned yesterday from our trip from the DE shore to Quebec City. Stopped at Saratoga Springs on the way up and Burlington, VT on the way back. Overall, the charging experience was a success.
NACS friendly Tesla charger off exit 9 of the NJ Tnpk (South River, NJ) got us to Saratoga Springs. Overnight hotel charger at no cost. Used an EVolve NY/Electrify America charger in Plattsburg, NY to get to Quebec. Charged at the Quebec hotel for free.
The return was a bit more funky. Wasted too much time finding chargers in Burlington and Albany - so poor planning on my part. Also, Tesla NACS friendly charges were rare as we went north. Returned to the South River Tesla chargers for the last leg of the trip home.
I have more detail on the specific charger locations if anyone needs it.
