I am very interested in vehicle to home considering I'm under the outrageous (investor owned) SDG&E rates from 4pm to 9pm at 80 cents per kwH plus I had an Enphase 5kw solar system installed in 2022.

I realize we're looking at next year potentially for V2H so I'm looking for a bridge until the V2H capable Enphase chargers hits the market and the R2 gets a firmware update to unlock it.

Could the portable charger be used with a 240V outlet in the meantime?

Rivian doesn't currently support any form of V2H (though they claim the hardware is present in Gen2+). So even if the mobile connector could backfeed your home (which I'm not sure it would even support electrically), the car just wouldn't do it.

If you're looking to be self-sufficient in the meantime, you'll probably need to install home batteries. That's probably a reasonable project even with V2H as the car wont always be there and wont always be charged. You could down-size the battery system knowing that you'll eventually have another 80kWh of capacity eventually, but I would not bank on that happening within any certain timeframe. If Rivian ever publicly abandons the V2H initiative or takes too long for your needs, you should be able to expand the home batteries pretty easily down the road.

I have a 10kWh Anker Solix X1 system installed and would love V2H as my batteries are usually depleted by bedtime if the AC is running (which in ATX it usually is). My old PV array wouldn't be able to fill too much more than 10-15kWh in a typical day anyway, which is why I didn't go bigger off the bat. But having an extra 80kWh for emergency backup would be amazing.

I'm finally get difficult to plan for v2h not knowing the time frames.

I agree with emroch that, absent OEM-provided V2H, having home batteries could be a good intermediate step. Be careful though - a lot of home backup batteries will not take 120V input (from your car) and do 240V output (to power your home) at the same time. And they often don't list that "feature" on their web site (in fact their wording may make it sound like it will work), so you may not discover it until there is a power outage.

My older Ecoflow batteries are this way. I tested to make sure they could power the house, and I tested to make sure I could charge them from my R1S...but didn't discover that I couldn't do both at the same time until there was an outage. See HERE for more details.
