Powder coat might be too thick, especially on the center piece that the sides slide over. You would want to look at anodizing (need to disassemble to have the bare aluminum pieces) or cerakote (may not require disassembly if you just want to do the side pieces and use the air cure version).
Yes, you definitely can, but there are holes in the same locations as stock to use the pucks, which is what most service centers will still want to do.
I have lifted directly from the sliders (jack on the inner rail, but "should" be able to do it anywhere on the slider) to change a flat on the trail. Have also used pucks with them at home to rotate and swap tires, and the service center used their pucks with them when they did some suspension...

I did this with several items when they came out. I wonder if the Rivian logo would still pass their copyright/trademark inspections now that they are making items for Rivian directly.
