Correct. For pre-March orders we got locked into the old pricing in the gear shop for the floor mats ($175) and crossbars ($450) but everything else that was removed from our orders will be new pricing when/if it ever reappears.

Despite being able to configure an R1T quad motor max pack back in the day Rivian is now not going to build that configuration so makes sense they won't offer an R1S quad motor max pack either.

Correct. Once you hit the confirm new configuration button on one of the R1 Shop trucks you are "locked in" and can't revert back to your original reservation.
