What you've quoted is consistent with my understanding of the Nationwide RCV policy. I believe they will add to their payment the sales tax (should be on the 110% value) and registration. At least that's what the agent told me, and was indeed the case in our loss.

You can't add it to the config you get from the shop after the fact. It's either part of the config you choose, or it isn't. If it's part of the config on a LE, it'll cost $2,000. If you had it on your original config pre-March 2022, then it was likely priced at $1,700.
That's pretty good! Did your full front include A pillars and the section of roof before the glass? Also includes lights/light bar? If so, definitely better pricing than what I got here in IL.

I understand it as the product covers from behind the 2nd row all the way to the tailgate (so covers folded down rear seats too), and the optional bumper cover would attach to the end of the liner and cover the tailgate when open and bumper.
I read it as for behind the second row seats too, meaning the third row would have to go down. If you want something to use behind the third row, try the linerx version (https://linerx.com/collections/all/products/linerx-cargo-liner-for-rivian-r1s).

One nuance to add to this from my experience - RCV can sometimes be limited to what you paid for the vehicle, or some percentage on top. It's my understanding that the Nationwide policy with RCV will pay up to 110% of what you paid for the car, though I don't have first hand experience to know...
