Rivian's paint process and composition is probably different, but here is a diagram from Mazda for their Soul Red Crystal Metallic paint. And it can help understand how metallic paints achieve their dynamic quality.
Under the pigment layer is a layer with suspended particles. Some of these particles are metallic (hence metallic paint). These metallic particles can reflect or block light—like two sides of any one-way mirror. And everyone should be familiar with mirrors? They reflect and bounce light from surroundings. And light isn't just bright or dark. Light has color too, the full spectrum, including those that aren't visible to the human eye. And what your eyes see, what is reflected from the mirror, depends on where you are in relation to position and orientation of the mirror. The composition of the metal particles can also influence, or tint, color of light that being reflected and reaching your eyes.
