I will be installing the Rivian Wall charger with 6 AWG copper wires for maximum home charging. There are two types of 60 amp circuit breakers available, a QP and QPH. Which one should I be using?

Has to do with short circuit interrupting current capability. For a residential application QP is probably best. You can upgrade to QPH if necessary but not all panels are designed to handle the higher short circuit currents. But we are not expecting a short circuit to occur in most cases

The Rivian installation guide says 6 gauge for 60 amps and 8 gauge for 50 amp breaker.

50amp breaker for 6g wire?
The Rivian installation guide says 6 gauge for 60 amps and 8 gauge for 50 amp breaker.
You can use 6awg THHN for 60A, but it would need to 4awg if you go NM. If they are running conduit and individual conductors then 6awg would be fine. If it's in a shielded bundle then it would have to be 4/3 (4awg) for 60A.
