So when it’s on the colder side I’ll often find that one or both of my displays are blank. Car still drives but it takes a couple hard resets for them to come back…sometimes this can an hour or two later. Anyone else experienced this?

What do you consider on the "colder side". I live in MN and have had my R1T out in -20 and much colder windchill and the screens were fine. Battery got down to single digits one time, so it was interesting trying to charge it. Most of the time it is in a heated garage, but I was out of town working. I have a gen 1 so maybe if it is a gen 2 some others may have had issues.

I would have it checked out. I have had a screen go wonky once or twice in my three years of ownership, but a simple soft reset always fixed it. It is similar to a computer if you never restart it, it may start doing strange things or not work correctly or just start to be really slow.

That isn't cold. There is a problem that needs the service center to get right.

It's probably a 12V battery issue. Happened to me (in western Mass., temps often in the teens). Supposedly an issue fixed with the update just released, but I'd keep an eye on the 12V. Sometimes in cold temps, and if you have Gear Guard or anything else running that pulls power from the 12V while the car is parked, the blank screens could happen. Once you start driving and the main pack replenishes the 12V, that's why the screens come back.

Are you on latest software? My gen 1’s screens have never gone blank, not until after latest OTA. It’s done it twice since.

Yes on the latest software. I should add this isn’t a new issue, it’s happened on and for over a year.

This is absolutely a service ticket. If you are seeing water stains you did not create in the driver's area footwell, it's possible there is a failure at the HVAC condensation plug that has led to water getting to and damaging electronic components. But I am only speculating based off something that happened when my screens did an occasionally random reset. There is another thread on this, but it is not necessarily your issue. Just get it to service. Feel free to let us know the result later.
