Has anyone found a good way to holster a gun in the cubby without having it rattle around and be easily accessible?

No, but now you have me curious. Grew up hunting but dont anymore. I love target & clay shooting. Depending on the gun, the door cubby is an option. I also saw some holders for the arm rest. Why the "quick-draw?"

If your gun is small enough, to fit inside the center console vault CharonPDX posted, you can get creative and find a way to mount a kydex holster.

Someone did this to replace the camp speaker:

One thing I will say about the camp speaker replacement is that I hope you don't need anything out of it if you have a drink in the holder right above it. I've been using one of my Camp Drawer replacements for a while now and I've been consistently disappointed with that. The ergonomics of having to pull it so far forward to get access, especially when in the driver seat, are quite poor.

Just figured I'd mention that in case you are looking to have quick access to a weapon in time of need.

It has to go in the cubby as I have kids and can lock it. I’ll only keep a gun if I believe my kids can’t get to it. I don’t live in a bad area but years in the military just makes me want one on me at all times.

I have one as well... it is on the smaller side, but works great for me.....

That could be a good option. Can it be locked when not driving? I don’t want it stored somewhere that my kids could get to. My two year old finds his way into everything and is infinitely curious.

haha.
Do you think it could store a Sig P365X and additional mag?

I have the exact same one on my r1s for my wife. It will fits an extra mag but will be a little tight. Hers is loaded and ready so no extra mag.

I think I'll go with the velcro option and just keep my Sig P365X in the cubby and wait for Rivian to release an official locking drawer.

I may also 3D print or fabricate a U shaped device do hold my gun to the side using the IWB holster clip, extra mag, Leatherman Arc.

Nice, yeh I only have one extra mag with one loaded and chambered. Not planning on any John Wick stuff, just incase I need to get out of a situation.
