Takes about a half day of driving before you brain and right foot get on same page. Smooth moderation of lifting will eventually lead to completely smooth decel to a stop. You will learn to love it, perhaps going days/weeks without touching the brake pedal (unless exposed to bumper-to-bumper commutes )

One peddle driving is a good thing when you get used to it. But if you really hate it, put it in Snow mode and the regen goes to the lowest setting.

Some additional info. Regenerative braking which allows one pedal driving works like this

When you press on the accelerator you supply electrical power to the electric motors from the high voltage battery on the bottom of the vehicle and that moves the vehicle forward. In an EV when you let pressure off of the accelerator those same electric motors that are moving the vehicle forward now become electrical generators and put a percentage of that power being generated by slowing the vehicle back into the HV battery. Pretry efficient and very cool.

So thru technology we are now able to push and slow a vehicle using electric motors. You can actually go several hundred thousand miles before you will have to change your brake pads if you use regenerative braking wisely.

We adapted to OPD very quickly and have come to love it. we have also found that we do not have any trouble switching back and forth from the Rivian to the Duramax. Try to get used to the OPD, it really makes for more pleasant driving. I think that OPD makes you a better driver being more aware of what's going on and paying more attention to your driving.

I recently picked up an R1S launch edition. My previous car was a 2015 nissan rogue. Right off the bat I noticed that if you are going say 30 mph or slower and take your foot off the pedal the vehicle comes to an almost immediate stop. With other cars I've driven if you take your foot off the pedal it will slowly coast and eventually come to a stop. Is this a feature more of a rivian or evs?

I did drive an hyundai ioniq 5 ev as a rental for a few days and don't remember this happening there.

Is it a bad thing for the vehicle to take your foot off the pedal completely until it's almost totally stopped?
Have you noticed your pedal has some "dead play" in it? (Accelerator pedal)

That dead play is how you can control the regen braking.
So don't take your foot off the pedal. Just relax it a bit until you feel it actually stopping. Then you can feather it a bit to control your de-acceleration.

With that. I always leave my setting in HIGH regen mode.
