Speaking of meat, I’m absolutely disgusted by the banning of Joey Chestnut this Fourth-of July at Nathan’s Famous hot dog contest due to his sponsorship with a soybean company that has a wiener-shaped vegetable masquerading as a hot dog. This is an OUTRAGE!! To quote Impossible: Impossible Foods told ESPN, that “they support Chestnut in any contest he chooses” and that “meat eaters shouldn’t be exclusive to just one wiener”.

My first foray into a pellet grill was a Traeger, but years later I found the light with my Yoder. The Traeger was a POS in comparison.

I built a smoker by installing one of those electric hot plates into a large flower pot. It's a larger version of Alton Brown's design, but using a repurposed Weber lid. Given the heat source/volume ratio, it never goes above 250 (-ish, my wi-fi temp monitor is the back of my hand...haha), but my intent was always slow-low larger cuts so it fits my needs perfectly. This has seen lots of pork shoulders, briskets, and ribs, while more recently, smoked cheeseburgers (my kid's fave) made its way onto the docket. I've even made bacon (regular, curry, sriracha, and chili flavored variations) on it a few times. That was not easy - lots of babysitting to keep a cold smoke consistent.

I forgot how much it cost to do this (this was almost 20 years ago), but I do remember it being close to buying a formal smoker (lower end one, anyway). Regardless, this was more about DIY pride than saving money.

We still use our RecTeq quite frequently. It’s one of the best things we’ve ever gotten for our house. Pork butt, ribs, wings, thick reverse-seared steaks or pork chops, etc. are all so incredibly easy.

Anyone considering a pellet smoker, just do it!!
