Rotating Tires With & Without Wheels

So, I have a second of wheels for my R1T which allows me to rotate my tires myself. Problem is, this means that one side of each tire is always on the outside as opposed to rotating tires with just one set of wheels where both sides of each tire are run on the outside. Looking for advice on which is the best method to use. Or, is this not an issue?

Not an issue, unless you have directional tread (marked on the sidewall). I think it's more left vs right, not in vs out. Many tires have one side with white lettering, which most will keep in or out. When you move front tires to the rear, cross them left to right (driver to passenger side) for even wear.

I was told to not change the direction of tire rotation as this promotes faster internal wear. Advised to keep them on the same side of the vehicle, just rotate front to back.

FWIW, I’ve always followed this practice: Tire Rotation Patterns, but it doesn’t specify with or without wheels.

Rivian recommends the reward cross as described in your link. Page 392 in the owners guide.

Only caveat I would add to previous statements is to ensure you know your tire symmetry before rotating. If they are symmetrical, go rearward-cross. Asymmetrical, go front-rear.

FWIW I do not know if there are any directional tires in these sizes, but it's a YMMV caveat worth paying attention to (eg. LTX MS2 are symmetrical, but not OEM). There are definitely directional wheels from the aftermarket.
