NFW would this be attempted out of a short in the yard move only.

NFW on an open road, NFW on a boat ramp launch and retrieve.

I'm not a namby pamby with towing either, including larger boats.

Glad it worked out, I guess.
What's the problem though?

Well, that center console and twin 300's is likely nicer, if not more expensive new, than your Rivian. A single 300 OB is what, $30-$35k+?

Sooo, in short, towing 3k lbs+ over rated capacity puts your Rivian tow rig, that fine boat, and everyone else on the road at risk.

While I'll press to or slight beyond tow capacity for short hauls, IME that's a bit much. Hate to have to engage in evasive maneuvers in any tow rig, let alone one that is so far overloaded. In stressful situations, that's where the 250's larger footprint and other capacity will pay dividends.
