Curious to know if the Adventure High Tech StowNCharge works or if the only real solution is to go with their RetroFit and AdventureMat combination (since I have 2 Apple MagSafe pucks waiting for my R1S to arrive).

I love the stowncharge. It should have come from Rivian like that. Nice to have the two USBC ports open. I even got an aftermarket MagSafe case for my son so he can also charge his Android easily.

Is there a way to convert the rivian connector into just a plain usb-c female port?

I just want three usb-c ports. Two for phone charging and one for the SD card. Don’t want wireless charging, as being able to still use the phone while charging is what we’re after.

In retrospect - yes...

I haven’t tried myself. But if you are splitting one side to two USB C ports, both to charge phones, and use the other USB C port for external hard drive for drive cam, I don’t see why it won’t work.
