Interesting, but unless the Rivian sees the unit as a phone for bluetooth purposes, the FM connection would be the only way to go. Assume that this would work, but not as well (quality) as bluetooth.
There is no head unit like a conventional radio to be replaced. Crutchfield (https://www.crutchfield.com/car/outfitmycar/mycar.aspx) can help with speakers but has no options for adding a head unit. If they can't figure it out, forget about it.

Service seems to be dependent on where you are. I have had good experiences in WA and my sons report good service in Oregon and the Bay Area (CA)...in the latter, the issue was not enough centers, which seems to be resolved.
Yep, XM in my Kia EV also doesn't like hills/valleys. None of those in WA either, of course. In flat country, it's great. I mostly listen to Audible in my R1T...the Audible feed syncs up really well. Walking the dog, driving, no glitches in the stream.

Both of my sons bought demos. Both satisfied. Recommend very careful walk around and test drive if you have access. One of the demos had an issue with wind noise...taken care of under warranty.
Crutchfield has also been great (pre and post sales assistance) on home audio...done some of that with them...but, yeah, I pretty much toss the catalogs, too.
