I'd just use the puck on a jack. Remove the plastic panels, jack it up, put jack stands under the blank spots left by the plastic panels, and I'm good.

I'm old, I don't want any automatic driving features. A simple set-the-speed cruise control would be all I'd want, and even then, I haven't used cruise control in years on any of my vehicles.
I think a big factor is access for the welding/painting robots. Sure is easy for them to just reach through a big hole in the roof to spot weld/spray what is needed and then glue a panel on top when it's done. Closing that in with a solid metal roof would change the whole manufacturing...
I'd love to hear comparisons to previous vehicles owner's have had. Great, it corners flat, but what kind of limits are we talking about? I don't expect to it hold a candle to my current sports sedan, and I expect it to handle better than my FJ, but there's a huge range between those extremes.
Did someone just run a wide bead of adhesive around the perimeter of that applique to hold it on?!? I see two clips near the middle and nothing else mechanical to hold it down.

Unlike most all other vehicles, I can't add an aftermarket winch to this truck because it can't handle the electrical draw ironically. Definitely need a Rivian solution on this one.

Someone weighed the stock 20" tire combo and came up with 88lbs. TireRack lists the 20" AT tire at 48lbs, leaving the wheel to weigh 40lbs. Haven't seen any other weights posted for 21" or 22".
I would definitely rock some 20" steelies for daily driving purposes.
