EV Plates are not required in Colorado. I've got US Army plates on mine. You can get an EV sticker for the upper passenger side corner of your windshield as an alternative to the plate.

Unless you need your tow hitch, this is EXACTLY what I would do. There are several options for hitch mounted tire mounts. Another option is to deflate it so you can compress it a bit to fit inside the space under the floor. I’m sure there are a few other redneck engineering options.
