Mine has rebooted twice while driving in 11 months and 18k miles. The frequency of reboots you describe is not normal. Schedule a service appointment and document the problem in the ticket.
Getting Safelite onboard for windshield replacements is definitely a step in the right direction. Repairs like this really need to be offloaded from the service centers to free up space for the stuff that actually requires Rivian-specific expertise.
