As you say yourself, CP is a screen projection app running on the car's hardware. Functionally, it likely works similar to VNC, RDP, etc. How is RIvian going to collect any data? The App running on the Rivian is receiving rasterized pixels, not intelligible data. All of the data is processed in the iPhone which is communicated via the iPhone mobile carrier. Furthermore, most or all of this traffic is encrypted.

Based on the fundamental technology of how screen projection works, the burden is on you to provide evidence that useful, collectible user data (and not just rasterized screen images) is exposed within the car manufacturer's implementation of CarPlay.
Correct - the phone projection implementation does not necessarily provide the vehicle manufacturer with data from the phone or any apps running on the phone; neither does a Bluetooth connection.

However, the use of a phone projection DOES NOT stop the manufacturer from collecting any of the driving data obtained normally. Phone projection does not disable any part of the vehicle software stack. Rivian or any other manufacturer does not "lose" the opportunity for any of these data, nor the monetization of collected user data.

Right.... Rivian has the driving data either way, with no context .... so it's absolutely nothing different.
