I don't remember which OTA it was, but sometime in the fall of '23 we got an update that changed how the accelerator responds at low speeds - giving you finer control when parking.

I have a GENESIS gv70 ev. The one pedal takes a little getting used to. I have 4 settings for regen. I use the regen paddles constantly and adjust them as I go with the flow of traffic. If I am coasting towards a red light, I let the regen do its job to come to a complete stop. Once again, it takes some practice and before you know it you'll master it without even thinking. Remember, regen also charges the battery and does not wear down the brake pads. And if your leasing, when you go to turn in the vehicle, if your brake pads are worn down to a certain percentage, Rivian will probably charge a small fortune to replace. Let me start off by saying I am new to EVs and pardon my ignorance. I plan on buying the R2 when I get my invite. With that being said I test drove it and was impressed. I will be learning the one pedal system and know it will be a learning experience.
You get used to one-pedal driving really quickly. I never hit my brake pedal when parking my R1T in my garage any more. Including the transition from moving forward to backing up to back in to my garage. It's now a seamless "let up on the accelerator, let up more, shift into reverse, press down on the accelerator to back in to the garage, let up on the accelerator, press the shifter 'Park' button."

Pretty much the only time I touch the brake pedal any more is when towing, in a drive mode that reduces regeneration (snow mode, some of the off-road modes,) or sudden/unexpected braking.

OPD isn't witchcraft...you can still use the brake.

I'm assuming you're not barreling into your garage at 60mph so if you gradually take your foot off the accelerator as you slow down, the vehicle will stop.

I'd guess everyone who has an EV, once they get the hang of OPD, sets it at max since it becomes second nature to drive w/o using the brake.

Don't worry, the wall will stop you if you aren't on the accelerator.
And R2 has enough torque that if you are on the accelerator, even the wall won't stop you.

The thread is TLDR for me, but just to be safe, in case no one has already said so, it sounds like you're misunderstanding one-pedal driving. It isn't a mode that DISABLES the actual brake pedal, just makes it so its not necessary much of the time. The actual brake pedal is still functional at all times.
