My experience with my R1T (vin ~13,000) is that it will definitely start heating the seats immediately, when the seat vent/heat icon is pressed, no matter how hot it is in the cab.
You are entitled to have your freakin' break. You can have all the breaks you want. The break I want, however, is for Rivian not to turn on heated seats by default. That should be about the simplest and most obvious thing to do.
