The difference between 65 mph and 75 mph is huge for range like you said. You aren’t getting more than ~250 miles on the R2 going 75mph+ unless you’re in IDEAL conditions, weather, elevation, road, cargo, tires, etc.
From the videos I've seen on R2 that have DCFC in it, the sweet spot is going to be 10% (or less if you want) to 73% or so when road tripping. That takes around 20 min. It falls off a cliff shortly after 70%. That's why the 10% to 80% rating is 29 min. The 70 to 80% is slow and isn't worth...
I think we can pretty confidently say no it won't. If it's 75 degrees outside maybe you will eek out 300 miles going 75 mph (aka 4 hours of driving 75x4=300) but that would be absolutely best case scenario. I would say getting 250 miles going 75mph is a safe bet within normal temperature...
Same and I own an M3P. The speed just isn't needed unless you're going for 1/4 mile times at the track. The R2 is a better sports car than most sports cars lol.
A Model Y and an R2 could not be more different vehicles IMO. The Model Y is a car that was bloated to a be a CUV (on the Model 3 platform). The R2 is a true SUV that maintains a unibody design and not body on frame like a truck, but is still a substantial size and feels like an SUV.

Once 800v chargers are ubiquitous and we have 10 to 80% in 15 minutes or less on most EV's, that'll be the winning ticket. Probably 2030 or so in my estimation. Even with fast charging, EV's lose a ton a of range at highway speed and when it gets cold so big-ish batteries are still needed...
