I have never owned an EV. If you are at a charging station & it’s going to take 40+ minutes, is it ok to lock your Riv and walk to a restaurant until you get a notification that charging is complete?

Yes. That’s super common. You should move the vehicle within a couple minutes of it finishing charging, however — don’t occupy a stall longer than you need to actively charge.

Yes it is. However, as a courtesy, you should move your vehicle once you’ve completed your charging session.

This is definitely one of the things you plan on when charging. In the Tesla world, a lot of the superchargers are conveniently located in shopping plazas and what not so you can eat or shop while the car is charging. I'm sure with the RAN, Rivian will do the same thing for a lot of stations.

FWIW, if you are charging with an app like Electrify America you can set the app to send a notification when your charge completes or reaches a certain level. Most car apps can do that too.
