Sous vide is straight up magic. Love it when entertaining because you can finish it whenever you want and not worry about overcooking it.

So if you look on the above or sous vide forums on reddit they have a now classic design of getting Coleman catering coolers and modding them. They are insulated so take very little energy for the sous vide machine to work and have non insulated lids that are easy to cut through and seal to the exact specs of the machine..they even have the hole saw but identified for above machines at least.

I have one modded like this for just my usual "large cooks" like a giant prime rib. It seals very tight.

I have a friend that often does this type of thing traveling to family with his Tesla and a spatchcocked turkey for Thanksgiving. It's a great idea and works for more scenarios like camping, ski lunches in the parking lot, just keeping food hot, etc.
