Plan to get food before your stops, and plan stops with something there besides charging...anything. Plug in and eat outside, use the restrooms or bushes and 30 minutes has passed.

Remember that I am following a large vehicle with much longer stopping distances so I have more than 1 second to stop.

This is true unless the larger vehicle meets enough force and stops quicker than they would with braking. Maybe something like a construction vehicle in the road or a disabled big rig...

not saying its often, but understand its not 100% safe.

I think it's safer than breaking down on the side of the road.
