First off, I think the truck if great,

Two parts:
A) I'd like to be able to shut everything down with perhaps a long hold (a second or two) on the shifter stalk button that would auto lock the doors upon exit.

B) And then perhaps a quick tap and a longer hold to shut the truck off and keep the doors unlocked. And on top of that have a selectable timer for reactivation or return to default.

My Ford has the proximity wake up with the FOB and for some reason I find it much less annoying than the R1T and my iPhone. I use the card key almost exclusively as I don't like carrying the Key

What's the reason to 'shut everything down'?

Tesla fixed the whole phone/proximity issue a few years back. I agree, we need that ASAP as I posted about the issue in my iPhone battery thread.

I don’t like having to fumble with the key card or activating my phone to shut off the lights, stereo, air compressor & HVAC. It’s a real first world problem but I’d prefer to manually shut the truck down as a preference

I'm probably not interpreting correctly as I'm relating this to the "on/off" button legacy auto makers have been putting in their EVs, which I despise.

Coming from other EVs, I just walk away and the whole vehicle shuts off as it sees my phone has left the vehicle vicinity. I do see what you mean if you wanted to stay in the car and shut everything down but I've never had become an issue with over EVs as if I'm in the vehicle I usually do want climate on, etc.

I will say, don't confuse what it's doing now (which is just plain nuts) with the phone key with a proper implementation of a phone key. Rivian's current phone key/proximity implementation is driving me insane. Hopefully soon to be resolved :).

Wouldn’t have to do anything different if they added some manual functionality I’d be happy. I use the truck for working and walking to and fro loading and unloading I don’t need it lighting up every time I open the doors

Since you referenced the lighting up it reminded me some vehicles have a toggle to disable the ā€œWelcomeā€œ functIonality. Something like that would disable the exterior lighting elements from opening each time a door was opened. I’m with Carman3 I saw ā€œon/offā€œ and screamed no buttons at the screen.

I have a power button in my Kia Niro EV, 2019 Launch Edition...on and off with the button is just fine. Proximity doesn't open the car till I press a button on the door. Yeah, it's old technology interface, but that doesn't make it bad.
