So I found a set in spectacular condition, part number 1DZ12TRAMB wheels locally, which I see is the right one. My question is; i'm just wanting to get some good all season's on it, not really worried about straight offroad. Any suggestions? I've currently got the 21's on it and until they come out with some other brand tire, I'm looking to run the 20's with 275/65R20 275/60/20 sized tires on there so the size stays the same etc...

If you want size to stay the same as the 21 OEM setup, you need 275/60/20.

For all season, I think the new Defenders LTX M/2 (or X LT A/S 2 from warehouse clubs) are best option. They are load rated to 116 and EV friendly.

I run the Pirelli Scorpion AS Plus 3 and am happy, but if I had to do-over I'd probably go with the Defender LTX M/S 2. I got really good efficiency with the AS+3 but it's 115 instead of the Defender's 116 load index and there's drama there.
