Which trailer hitch would anyone recommend for towing a 17ft Boston Whaler with a single axle trailer for an R1S?

This was the last Whaler I owned... loved it, but the family wanted something with a bit more shelter.

Yeah, if I had the room, I never would have sold her.. I grew up on Boston Whalers and still love them. But, we also have a Jetski on a trailer to contend with so two fulls size boats and the Jetski was just too much. It can get pretty snotty on the LI Sound and in the end, we needed something larger with 2 kids, wife, dog and beach gear for the day. I ended up with a Grady 192 (20') which has been perfect for us.I'll bet you regret selling her.

It's definitely overkill for my use-case, but I rest assured that I can use it for larger and heavier loads if I ever need to.
